1- Remove bag of organs from turkey cavity
2-In a small bowl combine oil and seasonings
3-Rub turkey with seasonings and oil mixture inside and outside the cavity, place onion & Jalapeno in the cavity
4- Place turkey in the roaster, breast side up.. i know a friend that does it the other way around.. lol
5-Cook turkey at 325 degrees for 3 1/2 hrs for a 16 lbs turkey, 3 1/2-4hrs for a 20lb turkey until popper pops and turkey leg comes off easily when twisted off.
