Im excited to say today Ryan and I celebrated our 19th wedding Anniversary!! It was wild and crazy!! We went on a 2 1/2 hr chartered fishing adventure as a family!! We brought home 19 Mackerel, and caught more than that and some small Pollock!! We had an amazing time despite the swells in the ocean and wind…. and the best part was the wonderful memories and the delicious meal we had tonight!!
Mackerel Is often a fish used for bait, but did you know it make a delicious meal! Thanks Captain Ben for the helpful hint of KristenKCharters, S. Portland Maine!!
I seasoned the fish with olive oil, 1/2 tsp salt, 1/4 tsp pepper, 1/2 a lime, 1/4 tsp (dash of chili powder) , 1/2 tsp garlic powder and 1/2 tsp onion powder. 1/2 onion cut in half… 2 garlic cloves left whole…. fish and veggies were grilled on a wood pellet grill, 350 for 10 min per side….the white rice was made according to package directions and cilantro was added .. sprinkle with soy sauce and it’s delicious!! A dab of butter was added to the bag of frozen veggies (or as an alternative, olive oil). Simply delicious!! I hope to have more time to give exact recipes soon 🙂 thanks so much for following along and reading tonight.. sleep well!! I know we will… fishing can be hard work, especially if your jigging!! Lol!!
