Healthy Mexican Dinner, & fire with friends!!

What is a healthy Mexican dinner?? Well it’s swapping ground beef with ground Turkey!! Swapping Full fat Refried beans with non fat beans!! Add sprinkle condiments like cheese & sour cream but add as much salsa as you want!! I love Mexican red rice so I made that of course 🙂 & Flour tortillas or corn are a must 🙂 yummy!! add a salad and it’s a healthy Turkey Mexican dinner with some pretty great friends!!

Another family couldn’t make it, we missed them & it would have been fun to get to know them better but it was still a great night!! It was a cool fall like night but how nice is it to be next to a fire :).

So that’s a healthy mexican dinner with friends 🙂 It’s an easy recipe! & per Covid era dinning we put our food in crockpots & ate outside!! I served Everyone buffet style!! How fun was that!! It really was nice to have friends over!
