Easy & delicious beef Jasmine Bowls for dinner, with optional Mushroom bowl!!

Hola!! Looking for an easy dinner for tonight? An easy pleasing bowl for your football night!! How about a lentil, jasmine rice & either beef or a Portobello mushroom bowl??? It’s so easy to make, & so yummy!! This recipe makes about 4-6 bowls & you’ll have extra lentils!!

Beef, lentil, & Jasmine rice bowls!! Delicious & easy to make!!

Ingredients:

11 cups water

5 crushed garlic cloves

2 cups rice

2 lbs ground beef

1 lb dry lentils

1 onion diced

Salt, pepper, garlic powder, onion powder, cumin

1 tbsp Olive oil

10 oz Frozen corn

2 Portobello mushrooms

Beef

To prepare the beef, brown the meat on medium high heat. It will take about 10 mins to cook!! 3-5 mins on each side.. Season while it’s cooking. I recommend a salt, pepper, chili powder, garlic & onion powder mix. I usually do 1 tsp of each. After meat is browned, drain the fat 🙂 add one large diced onion cook for additional 5 mins or till onion is translucent!!

** Tip** I recommend if you want cooked ground beef for another meal, cook a 5 lb batch & use 2 pounds for your bowl!!

Jasmine rice

Prepare the rice according to package. 2 cups rice to 3 cups water bring to boil, turn down low for 15 mins. Add 2 crushed garlic cloves, 1tsp salt & 1tsp olive oil.

Lentil

To prepare lentils, follow package directions. 1-In a large saucepan add 1lb of lentils to 6-8 cups water. Bring to boil on medium heat.

2-cover & simmer 15-20 mins or until tenderness is reached. Add 2 crushed garlic & season with salt, onion powder, & cumin to taste. Remove from heat, drain if desired.

Portobello mushroom

Mushroom, lentil & Jasmine bowl!!

For the portobello mushroom, scoop the inside where folds are at, cut stem & season with salt & 1tsp olive oil. Sauté with the remaining 1 tsp olive oil til tender apx 10 mins on medium!! Enjoy

Putting it all together

So now let’s start putting everything together & making our bowls!! For this bowl I used 1 1/2 cups rice 1/2 cup lentils, 1 cups beef for beef bowls and 1/4-1/2 cup corn!! For the plant based bowl I used one Portobello mushroom! Each bowl would have these portions 🙂

Top with cheese, or plant based cheese, hot sauce, chili sauce & or soy sauce for added salt!

This is an easy meal to prepare & would be fun as part of your Sunday funday football food too!! or weekday meal!!
