Vegetable & Chicken Soup & Restful & full of Love Day!!

Good afternoon!! Hope you all had a great day today!! As you know Omicron has taken the stage in our lives these days! Here in Maine we seem to be catching up with what’s going on in the world, and in our Country! There’s been an increase in cases in our city as well and sadly has reached our family as well!! Boo hoo!! So today my test read  positive!! Boo hoo!! Awww man!! That really is awful!! But we’re making the best of this time & we seem to have mild symptoms! So here is what our stay at home day with positive diagnosis was like & a quick easy stew/soup recipe for you to try!! Our day was also filled with love & support too & my heart feels full!! 💗💗

As you know when you have children you’re always on the clock, & when your son has semester finals we must be up & ready to start the day. He has a sore throat, boo but he wanted to get his spanish exam out of the way!! So it was a quick breakfast… somethings easy for you to try!! It’s delicious!!

Covid Breakfast

One great things is that we still have the use of our taste buds, hurray!! My hubby loved this burrito!! Oh he’s working from home, he also has a sore throat & feeling blah, poor fella but he’s working hard, using our expresso trailer as his office!!

What I used was scrambled eggs & leftover mashed potatoes!! OMG delicious!!

We have some pretty amazing friends, they stopped by & brought us a delicious meal from Panera Bread for lunch!! & Brought us canned soup, vegetable broth, ginger ale, juice, crackers! The love shown brought tears to my eyes!! Thanks guys!! 💗💗

Quick covid Vegetable & chicken recovery soup!

I must say when you’re sick you want to eat something hot & soothing like stew/soup!!

Do you need something quick & in a flash?? Would you to make something fast & easy for your sick friends?? Here’s a simple stew/soup to throw together!!

Chicken, Broccoli & Vegetable Stew!

2 cups frozen broccoli

1 1/2 cups mashed potatoes

2 cups cooked cut up Chicken

32 oz vegetable broth for soupier soup add two broth containers (64 oz). I used one 32oz. 

2 cups frozen mixed vegetables

1 garlic clove crushed 

1/3 cup onions

1 tsp diced onion

1tsp garlic powder

1 tsp Salt & 1/4 tsp pepper  & more to your taste

Put everything minus cooked chicken in a stock pot on medium high heat. Bring to boil, & simmer apx 10-15 mins til vegetable are cooked thru. Add cooked chicken, warm up for 8 mins. Bon apetite
