Hello there & good afternoon!! It was such a beautiful sunny day here in Maine, we spent our afternoon outside!! I didn’t want to come inside to cook, the Sun felt so nice sitting in the deck!! I also had a Spanish lesson to teach so I had to take care of that as well!! So this is what I came up with for dinner!! It came out so delicious!!

Today I’m sharing the stew I threw together today, as I mentioned it came out Muito Bom, (very good in Portuguese) yummy!! My daughter made our chocolate vegan cake, I have this wonderful recipe!! It was the perfect accompaniment for dessert!!
Why add Quinoa to your diet?
Quinoa isn’t it such an interesting word? I love it, it’s a small grain that was found in the Andes & mostly grown in Bolivia & Peru today!! There are a few popular varieties among the thousands including red, white & black!! The darker the color the better it is for you!! Interesting isn’t it?? It has a nutty flavor, it can replace rice in recipes, it can be ground into a flour, it is gluten free & contains lots of vitamins, minerals, fiber & lots of protein 🙂 making it is a very nutritious whole grain 🙂
Ingredients for the Quinoa Turkey & Lentil stew!
I often cook for a crowd, or for more than one meal so you can minimize the recipe for your needs by reducing the amount of Turkey!! This recipe can be simplified by adding 1/2 cup to 1 cup lentils while cooking the quinoa, maybe adjusting the water! I just like to have extra lentils for breakfast or other meals 🙂 so I make it separately
INGREDIENTS
- 3 lbs Browned & seasoned Ground Turkey,
- 1 Diced onion
- 1 can 15 oz Tomato sauce
- 1 can 15 oz kidney bean or pinto or black beans. Apx 3 cups water
- 2 tsp seasoning salt,
- 1 tbsp each garlic powder, chili powder,
- dash of pepper
- 2 cups quinoa (make sure to rinse twice)
- 1 Jalapeno
- add 1 cup frozen corn or frozen vegetable you like
Sauté onions, then add tomato sauce, beans, seasonings & water & jalapeño, & corn. Bring to boil, rinse quinoa twice then add to the pot.. simmer 20 minutes or until quinoa is cooked! You will know when it’s cooked when you see what looks like a tail!! Or little half circles!! It will soak up water so add alittle if you would like & adjust seasoning!!
In this recipe I Cooked the lentil separately so that can be added to the pot or to your bowl then the stew on top of that!! Makes for a delicious stew! Add cheese If you like & pair with a salad and/or bread 🙂 Bon appetite!!
