Avocado & Bean crunchy salad!!


Oh my gosh this is a delicious, full of flavor & colorful salad 🙂 It also fits the bill for being vegan, vegetarian or add some cheese & meat and you can go the other direction!! It can be a super large salad for one or made for two 🙂

Personally I’m trying to eat at least one or two meals a day that are mainly plant based!! I am  also trying to add either eggs, chicken or Turkey for at least one meal!! My husband loves pork & smoking his meat which I must taste or have alittle in my dishes but not very often :). I was doing strictly vegan for a time but have been gradually adding in a more varied diet!! My hormones have been off for two years now & trying to cure my ailments with food & eliminating inflammation causing foods!! I still love plant based meals!! Yumm!! 

What I love about Salads are they so good for you & you can add whatever you like to change up the flavor!! So this one is soooo delicious!! Give it a try 🙂


Crunchy Tortilla & Bean salad with Avocados!



For Tortilla Chips
3 corn tortillas  
Bake in oven at 400 degrees for 10-13 minutes turning half way until golden brown. 

For Salad:

1/2 cup beans: black or pinto canned beans, I made a mix of black & pinto beans 🙂 

1/2 diced avocado 

diced onions

1/2 diced tomatoes 

1-2 cups salad

Marzetti Balsamic Vinaigrette

Herdez Salsa Verde mild

Start with a bed of lettuce, add beans, all the toppings, then the dressing & salsa 🙂
