It feels soo wonderful to get together with friends again!! We’re doing outdoor things with just a few friends at a time, it helps that Both my husband and I are fully vaccinated 🙂 yay!! We had a great time having dinner on our DIY Pallet Patio!! I cooked smoked chicken with potato wedges, lentils & coleslaw 🙂 everything came out so yummy!! My friend Made homemade bread to go along with our meal!! So yummy!! Then We played Badminton & sat around the fire after!! It was So much fun!! Today’s post will share simple recipes you can cook yourself & you can find out where I goofed with my chicken!! Please learn from my mistakes 🙂 😂
For my Smoked chicken, which I adapted, I used whole breasts & created a marinade then brushed the sauce on the chicken while cooking. Brush on again 1 1/2 hrs into cooking then every 30 mins after!! I smoked the chicken at 250 for 3-4 hrs until the temp reached 165!! The chicken came out very delicious!! Unfortunately I had a problem with my smoker, please make sure you fill the pellet bin completely before cooking just in case you run out while cooking and your chicken stops cooking!! ahhh!! I also recommend making sure the chicken is cooking even checking 10 mins after putting it in!! Also make sure your thermometer is set on Fahrenheit!! Mine was set on Celsius!! I didn’t even know mine could do that!! Oops, there is a huge difference in cooking temps! Chicken should be cooked only til the center reaches to 165Farenheit!! Mine was way too cooked!! I’m just glad it didn’t burn!! All in all it came out delicious 🙂 also make sure to leave the skin on!! I didn’t, I was trying to go with a lower in fat chicken, nope but not for the grill friends!! I know that now 🙂
Sauce
From a book entitled Americas best BBQ by Ardie A. Davis & Chef Paul Kirk I adapted this East Carolina Basting sauce;
- 3 Cups apple cider vinegar
- 2 Tbsp black pepper
- 2 tbsp sea or kosher salt
- 2 tbsp brown sugar
- 1 tbsp cayenne
- 7 Chicken breasts
- 2 crushed garlic cloves
Preheat your pit or grill to 230-250F. Combine all basting ingredients. Whisk to blend. I marinated the chicken for about an hour prior to putting on the grill with about a cup or so of the basting sauce!! Then place chicken on the grill with skin side down. I tuned the chicken but the recipe says you don’t have to. Baste the chicken with the sauce 1 1/2 hours and baste the skin side every 30 mins till done 🙂 this is delicious 🙂

With our meal I also made potato wedges in the oven. Coleslaw, I bought a premade bag & added my vinegar, maple syrup, vegenaise. Check out the recipe on this post A twist On Shepherd’s Pie Dinner with vegan Coleslaw!!
Baked Potato wedges;
- 8 potatoes cut into halves then 4’s -8 per potato
2 crushed garlic cloves - 3 tbsp olive oil
- 2 tsp soul seasoning
In oven 425 degrees, then bake 25 mins. Enjoy
Wine & fruit drink
Makes about 4 servings
- 3 cups orange juice
- 2 cups wine
- 1 ring of pineapple in each cup
- Frozen blueberries 🙂
In a large pitcher mix orange juice & wine!! In each glass put a ring of pineapple and blueberries then fill with wine & orange mixture 🙂 enjoy!!
Mocktail serving size one
- 1 Ring of pineapple
- Frozen blueberries
- Apple juice
fill each cup with a pineapple ring, blueberries then fill with applejuice!!
